It really gives kids a boost to their self-esteem to be able to take care of themselves, especially in the kitchen ... and when the recipe tastes as great as my Blueberry Buckle, that's a bonus.
If you haven’t heard by now, blueberries are loaded with antioxidants that fight aging and disease, so finding fun ways to incorporate them into your diet is important. This yummy quick bread can be served for breakfast, as an after-dinner dessert ... or just a delicious snack!
Blueberry Buckle
Batter:
¼ cup butter
¾ cup sugar
1 egg
½ cup milk
1 teaspoon vanilla
2 cups flour
2 tablespoons baking powder
½ teaspoon salt
2 cup fresh or frozen blueberries
Topping:
½ cup sugar
¼ cup flour
¼ cup butter
½ teaspoon cinnamon
Preheat oven to 375 degrees.
For the batter, cream butter and sugar in a bowl, using a fork. Add egg and vanilla and mix well.
Combine dry ingredients in a separate bowl.
Add dry ingredients and milk to the first bowl, alternating until all is combined.
Gently fold blueberries into batter and pour into a greased 9"x9" pan.
For the topping, combine all ingredients in a bowl and mix with a fork until it is crumbly.
Sprinkle topping over buckle and bake for 45 minutes or until golden brown and springy in the center.
Serves 8-10.
