These are simple recipes that can be done independently. It really gives kids a boost to their self-esteem to be able to take care of themselves, especially in the kitchen.
We are going to start with 2 breakfast favorites ... the Breakfast Sundae and the One-Cup Omelet. These 2 recipes work well together to give your kids a balanced breakfast!
Breakfast Sundae
1 16 ounce container fat-free vanilla yogurt
2 bananas; sliced in chunks
1 pint strawberries sliced
1/3 cup granola
Spoon ½ cup yogurt into an ice cream dish, top with fruit and granola.
Serves 4
One-Cup Omelet
2 eggs
1 tablespoon milk
¼ cup shredded cheddar cheese
Pinch of salt
Non stick cooking spray
A variety of additions ... like ham, turkey, red and green bell peppers, onion, mushrooms, black olives
Spray cereal bowl with non stick spray.
Beat eggs milk and salt in bowl with a fork.
Mix in cheese and other “add ins”.
Microwave on high for 1-2 minutes.
Run a knife around the edge of the egg and flip bowl upside down to pop omelet out.
