It can seem counter-productive to spend valuable time teaching your kids to cook. It ends up taking more time and a lot of patience ... but remember you are investing in your future!
Once your kids know how to make a few dishes on their own, you can send them to the kitchen and take the night off! My Chicken Quesadillas is a super recipe for kids to start with ... and it's virtually impossible to mess up!
Spicy Chicken Quesadillas
1 large baked chicken breast
6-8 tortillas
1 cup shredded cheddar cheese
¾ cup salsa
2 tablespoons finely chopped onions
1 teaspoon cumin
1 teaspoon chili powder
½ teaspoon garlic salt
In a small saucepan shred chicken, add spices and warm through.
In a bowl combine chicken, corn, beans, cheese, salsa and onions and mix well.
Place tortilla on a griddle that has been brushed with olive oil.
When tortilla begins to brown, flip and place a spoonful of the chicken mixture on half of the tortilla, fold over to form a taco shape.
Cook for 1-2 minutes, then flip and cook the other side.
Serve with shredded lettuce and tomato salad, guacamole and sour cream.
